I spent all night putting together a rather large Secure Digital High Capacity (SDHC) memory card sales display. It took me hours to finally finish it. The prices were so good that I bought a 16gb SDHC model for my camera as well. You could tell the person who wrote the instructions was a nonnative English speaker, though. It was a buggar to put together correctly using the garbled Engrish directions. I like doing this kind of work, though, as it preoccupies me all night and I stay busy and awake. It seemed like the time flew by and it was time for me to go home.
George arrived about 5am and told me his mother had half a chocolate pound cake she wanted to give to me. Oh Joy! I swung by Mrs. Florene’s and George’s house after making my daily foray to McDonald’s for I and the dogs.
“I cooked two more for the church bake sale,” Mrs. Florene told me. “They turned out pretty good for being in a hurry.”
The only downside to the pound cake being chocolate was that the dogs couldn’t have any – chocolate being toxic to dogs. Maggie has a terrible sweet tooth and it about drove her crazy when I was having a slice before retiring this morning. Mrs. Florene about outdid herself as well. It was some the creamiest and most decadent chocolate icing I had ever tasted – almost like chocolate silk.
Planning for Grocery Day…
I am going to try something different today and try to cook every day this week. Mom keeps telling me all that prepackaged and prepared food I eat must be bad for me, and she is right. It also generates a ton of trash as well. She called me last night and we both brainstormed on stuff that would be nutritious and easy to cook. We’ve tried this before, but I easily get tired after working all night and just don’t feel like cooking when I get off. I could hear dad keep telling mom over the phone to find some frozen meals for me to eat, but they are pretty bad for you as well with all the fat and sodium.
A Railroader’s Dream…
The railroad line from New Orleans to Atlanta is just down the street from my house. The economy must be finally booming as I hear dozens of trains everyday lately – more than I ever have since moving into this house several years ago. I keep saying I am going to get back to one of my favorite obsessions over the years. Rail fanning. I like to keep a collection of photos of the locomotives. Oddball locomotives are even more fun to see. The locomotives of my youth are slowly fading away, though, so it’s now or never.

Spaghetti is easy. Also baked chicken as well as a crock pot roast with vegetables are staples. I don't eat meat except for fish and shellfish. But the vegetables are great. I don't like prepackaged foods.
I have a tiny crockpot,you ought to look into getting one,you could cook while at work!!
I have a recipe for you... Any cut of meat, rump roast, london broil...whatever is on sale. Stick it in a crockpot with 1 package of Lipton's onion soup mix and 1 can of cranberry sauce dumped on top. Bon apetite' J.A.!
Let me put in my vote too for a crockpot and an easy crockpot cookbook. You can put something on before you go to bed in the morning, or before you leave for work, and it's ready to eat, plus you have several other nice meals ready to reheat. Or if you get tired of something, freeze it in one-portion sizes. You'll always have your own frozen meal to pull out of the refrigerator.

Russian Chicken
8 oz. jar Apricot preserves
1 bottle Russian dressing
1 pkg. dry onion soup
Mix together and pour over chicken breasts .
Cook in crockpot or in regular oven at 350 degrees for 1-1-1/2 hrs.
This is delicious and so easy. I hate to cook, so my recipes are easy and simple.

I also vote for a crockpot. Here's my easy pulled pork recipe. You can use your favorite cut of pork, whether it's a pork roast, or boneless chops, or boneless ribs. Slice 1 medium onion and throw it in the bottom of the crockpot. Put the meat on top of the onions. Add no more than 1/4 cup liquid (apple juice, cola or just plain water). Let it cook on low while you're at work. When you come home the meat will be soft and easily shred with two forks. Add your favorite bbq sauce and serve on some nice kaiser rolls. Yum!
P.S. - I've also made the pulled pork recipe with boneless turkey breast and with chicken thighs. It comes out great regardless. My favorite bbq sauce to use with this is KC Masterpiece Hickory and Brown Sugar.
